Stack up your morning with scrumptious french toast!

Deluxe, yet relatively simple, this tasty morning delight is perfect for anytime…holidays, special occasions, breakfast in bed or just because.  A triple layer treat with unforgettable goodness–enjoy!

What you’ll need for the French Toast:

  • 3/4 c.  + 1 Tbsp.  rice milk
  • 1/2 c. cashew butter
  • 1/4 tsp. cloves
  • 1/4 tsp. allspice
  • 1/4 tsp. nutmeg
  • 2 Tbsp. vegetable oil (I use safflower)

Additional ingredients:

  • Bread (2-3 pieces per person depending on how hungry you are)
  • Strawberries (3 per layer, see note)
  • Pecans, chopped (1 Tbsp per serving)

NOTE: If you create a triple layer french toast stack using 3 slices of bread, you need 6 strawberries, sliced. If you are only using two pieces of bread, you’ll have one layer of strawberries; so use 3 strawberries, sliced.

What you’ll need for the Coconut Squiggle:

  • 1/3 block extra firm tofu, pressed and drained
  • 1 c. coconut milk
  • 2 t. stevia
  • 1/4 tsp. coconut extract (sometimes I use almond extract, cuz that’s yummy too!)
  • 1 1/2 tsp. arrowroot powder
  1. Start by creating the squiggle first so that it can cool.  In a blender combine the coconut milk and the tofu.  I like to cut the 1/3 block tofu in half first, then press it.  Add the rest of the squiggle ingredients and blend till perfectly smooth.
  2. In a shallow saucepan, gently bring the mixture to a boil, whisking the whole time.  Reduce the heat to low medium and cook for about another minute or so.  Remove from heat and let cool.
  3. Using the blender, combine the ingredients for the french toast batter.  Pour onto a plate or into a Glad plastic sandwich container (some kind of square tupperware).
  4. Get a non-stick skillet ready.  Turn onto low-medium heat.  Dip each piece of bread into the batter, making sure both sides are coated, and let the excess drain off.
  5. Cook until the underneath is golden.  You’ll know because you will start to see the edges touching the pan look a little crispy.  Remember the first piece takes the longest to cook.  Flip with a plastic spatula when the first side is done.
  6. Repeat for each slice and keep the other pieces warm in the toaster oven or oven (you can place the temperature on 190 or 200) because depending on how many pieces you cook, it may take a while.
  7. While the french toast is cooking, slice the strawberries.  Cut off the tops and then  into 4-5 slices each.
  8. After the toast is done, assemble each stack, zig-zag the topping, sprinkle with pecans and even a shake or two of cinnamon.  Place a strawberry on top for a nice touch. (Don’t slice of the top, just gently cut into five, but not all the way through and then fan out).
  9. Wow your guests or impress yourself, then dig in!

OMG, I feel like I need breakfast RIGHT NOW. I’ve had this before and it’s truly the best and you have all your nutrients to start you off on the right foot for a great day :) Thanks for the wonderful recipes!
