Triple Decker Waffle Wonder

I like to start my day with a big breakfast.  Plus, I LOVE waffles!  If I don’t have a lot of time, but want something beyond a bowl of cereal, then I come up with convenient and balanced ideas like this one.  This recipe is interesting because I don’t need to rely on the sole use of maple syrup as a topper.  Blending in some flax seed oil is a clever way to sneak more of this great omega into my eating plan.  Too much maple syrup and I will be off the walls because of the sugar.  Paired with the protein from the cashew butter definitely makes this a delicious breakfast to wake up with.  Even better is that it takes less than 15 minutes!

Triple Decker Waffle Wonder

Ingredients:
3 frozen waffles (Organic Van’s All Natural Homestyle)
Cashew Butter (Eastwind is the brand I used)
1 banana
2 T. almond milk
1 ½ T. Pure Maple Syrup (Whole Foods 365 brand, Grade B)
1 t. Flax Seed Oil (Spectrum or Barleans)
2 T. UNCHOPPED pecans
A few sprinkles of ground cinnamon

Start by toasting the waffles in a toaster or toaster oven to your desired level of toastiness.  Meanwhile, in a blender, put: ¾ of the banana (chopped), almond milk, syrup and flax seed oil.  Blend until smooth.  Grab the pecans and chop them.  I like to use my chopper, but you can use a knife to chop finely, it will just take a little longer.  When the waffles are done, spread about 2 teaspoons on two of the waffles.  So that’s a total of 4 teaspoons used.  Sprinkle each of them with a dash of cinnamon and stack ‘em up!  The top waffle should be the one without cashew butter.  Finally pour the banana syrup over the top of the waffle from the center point—the syrup will distribute itself evenly and look perfect, draping itself over the side.  Top with your chopped pecans and use the rest of the banana (sliced) as garnish.  Ta-da!  Dig in!

Serves 1 (or 2, depending on how hungry you are.  I ate the whole thing!)
